Migliaccio Recipe – A Carnival Cake from Campania Region

Migliaccio” is a traditional Carnival cake, particularly popular in the region of Campania, Italy. It is a type of baked pudding or cake made primarily from semolina flour, ricotta cheese, eggs, sugar, and flavorings such as citrus zest and cinnamon.

Migliaccio - A Carnival Cake from Campania Region


  • 500ml (17oz) milk
  • 400ml (14oz) water
  • 1 orange zest, grated
  • 1 lemon zest, grated
  • 1 cinnamon stick, or 1 tsp cinnamon powder
  • 50g (1.8oz) butter
  • 1 pinch salt
  • 180g (6oz) semolina flour
  • 4 eggs
  • 250g (9oz) sugar
  • 250g (9oz) ricotta cheese
  • icing sugar, to decorate

  • In a large pot, combine milk, water, orange zest, lemon zest, cinnamon, butter, and a pinch of salt. Bring the mixture to a boil. When it is close to boiling, remove the cinnamon stick.
  • Lower the heat and add semolina flour gradually while mixing with a wooden spoon until you obtain a smooth cream-like consistency.
  • Turn off the heat and allow the semolina mixture to cool.
  • In a separate bowl, break the eggs and add sugar. Beat well using an electric whisk until the mixture becomes creamy and well combined.
  • Add ricotta cheese to the egg and sugar mixture. Mix with a spatula until fully incorporated.
  • Combine the ricotta mixture with the cooled semolina cream, adding it gradually and mixing with an electric whisk until smooth.
  • Prepare a 24cm diameter springform pan by lining it with baking paper. Pour the cream mixture into the pan.
  • Bake in a preheated ventilated oven at 165°C (approximately 329°F) for about an hour, or until the cake is set and golden brown on top.
  • Once baked, allow the cake to rest in the oven for about ten minutes with the door slightly open.
  • Once cooled, decorate the cake with icing sugar before serving.
