INGREDIENTS for 4 servings:
Ready in 30 min
320 gr Spaghetti Pasta ( we used Chilometro 5 Pasta)
250-300 gr Mozzarella, diced
500 gr Tomato puree jar
Salt and extra virgin olive oil
Some basil leaves
1 small onion, finely sliced
METHOD

Put a heavy deep skillet on the medium heat. When the bottom of the skillet is warm pour about 3 tbsp of olive oil into it. Let sauté’ for a few minutes, until the onion slices become translucent. Mix with a wooden spoon. Then add the tomato puree, ½ glass of water and salt. Turn on the stove at low heat. Cover with a lid and let simmer for approximately 10 min.
All along the process, check if the tomato sauce is too thick or is condensing onto the bottom. In this case, add a bit of water and stir. Add the diced mozzarella and stir until it is melted. Cover with a lid and let cook for about 10 min. Check and stir the sauce consistently. When it is ready add the basil leaves.
In the meantime bring to a boil a big pot filled with some water.
When the water is boiling, add the pasta. Stir and add salt when the water is boiling again. Let cook following the instructions on the package. Drain the pasta and mix with the sauce in the skillet. Add some fresh basil leaves and serve!
