Hazelnut Cake and Chopped Chocolate

The best way to avoid the Christmas shopping frenzy is to be at home baking our hazelnuts cake with your children … and do not forget to play nice Christmas songs in the background!

When the cake is out of the oven, bring out all the Christmas decorations you have at home, and let your children adorn the cake as best as they can. Enjoy every single moment with your loved ones!

INGREDIENTS (for a 22 cm cake)

  • 200 g all-purpose flour
  • 150 g granulated sugar
  • 200 g ground hazelnuts
  • 200 g butter, at room temperature
  • 100 g chocolate, chopped
  • 2 eggs
  • 2 g baking powder
  • a pinch of salt

METHOD

Preheat the oven at 160º C. Grease and flour a 20 cm ring baking tin.

Place eggs and sugar in a bowl and beat with a mixer until light and fluffy. Add the butter, cut in small pieces, and keep mixing until well combined.

Melt the chocolate and let it cool until it is lukewarm.

In a separate bowl, whisk together flour, salt and baking powder. Sieve the dry ingredients in the batter, add the hazelnuts, the chocolate and mix the batter until it is well combined.

Pour the batter into the baking tin and bake for about 40 minutes. Test cake for doneness by piercing the middle with a wodden toothpick; if it’s clean it’s done.

Before serving, dust the cooled cake with icing sugar.
