Sweet Bruschetta Dessert made with Foam Ricotta and Red Plums

One of the most important days of the year is getting closer: Mother’s Day! We may be biased in saying that, as we are ourselves moms of 4 lovely teenagers, but we can’t wait to be the most celebrated person in the family for one day out of 365.

This recipe is thought specifically for those kids who wish to send their love to their adorable moms, without spending hours in the kitchen and without leaving a dirty kitchen behind…this would be an appreciated gift. :-))

Sweet Bruschetta  made with Foam Ricotta and Red Plums


Sweet Bruschetta

  • 1 tbsp sugar
  • 3 red plums
  • mint leaves, to taste
  • 250 g (1 cup) ricotta
  • 4 slices of good quality bread


  • Toast the bread for 5 to 6 minutes until lightly brown on both sides. You can also use a grill or a pan until the bread is crispy.
  •  Place ricotta and sugar in a bowl and beat with a wooden spoon until creamy (alternately use a stand mixer).
  • Spread the foam ricotta on the bread. Cut the red plums in slices. Decorate the bread slices with plum slices and mint leaves, to taste.
