The colour of this Spumante wine from theValdobbiadene area, in the northeastern corner of Italy, is a delicate pink with violet reflexes, while the nose is fruity with red and blue stone fruit.

INGREDIENTS for 4 servings:
400 g smoked salmon
2 ripe avocados
2 tbsp extra virgin olive oil
juice of 1 lemon
freshly ground pepper
Dice the avocados and mix them in a bowl with the lemon juice. Add 1 tbsp of extra virgin olive oil and a pinch of salt. Mix gently.
Cut the salmon in small pieces.
To serve the tartare use a coppapasta. Pack gently ¼ of the salmon into it and then put on top ¼ of the avocado mixture (or first avocado and then salmon). Press gently with a spoon. Remove the coppapasta. Drizzle the tartare with a little olive oil, freshly ground pepper. Repeat as above to prepare the other three portions. Serve immediately.
