INGREDIENTS 4 servings:
4 heads Belgian endive
extra virgin olive oil
freshly ground pepper
fresh thyme or rosemary
Preheat the oven to 180 °C. Rinse the endive under cold running water and remove wilted leaves. Cut each head in half lenghwise. Place the endive on a baking tray. Drizzle with extra virgin olive oil and sprinkle with salt and pepper. For an aromatic twist add a few sprigs of thyme or rosemary.
Roast for 20-25 minutes until the endive is soft and lightly brown. Serve hot or warm with a splash of balsamic vinegar.
