Aromatic Roasted Belgian Endive

Are you short in time and looking for a simple, fast and original recipe to prepare tonight? We have one which is right up your alley. Enough talking, it’s time to start cooking!

INGREDIENTS 4 servings:

  • 4 heads Belgian endive
  • extra virgin olive oil
  • salt
  • freshly ground pepper
  • fresh thyme or rosemary
  • balsamic vinegar


  • Preheat the oven to 180 °C.
  • Rinse the endive under cold running water and remove wilted leaves. Cut each head in half lenghwise.
  • Place the endive on a baking tray. Drizzle with extra virgin olive oil and sprinkle with salt and pepper. For an aromatic twist add a few sprigs of thyme or rosemary.
  • Roast for 20-25 minutes until the endive is soft and lightly brown. Serve hot or warm with a splash of balsamic vinegar.
