INGREDIENTS 4 servings:
- 4 heads Belgian endive
- extra virgin olive oil
- freshly ground pepper
- fresh thyme or rosemary
- balsamic vinegar
- Preheat the oven to 180 °C.
- Rinse the endive under cold running water and remove wilted leaves. Cut each head in half lenghwise.
- Place the endive on a baking tray. Drizzle with extra virgin olive oil and sprinkle with salt and pepper. For an aromatic twist add a few sprigs of thyme or rosemary.
- Roast for 20-25 minutes until the endive is soft and lightly brown. Serve hot or warm with a splash of balsamic vinegar.
