We are always in trouble when it comes to finding a cauliflower recipe to serve to our children. After many failed attempts to prepare it mashed, boiled or baked with a creamy béchamel sauce, we finally managed to find the right recipe to satisfy their picky palate. Luckily this is also easy to make and it’s perfect for those of you who are on a restricted diet or simply looking for a meatless meal option.

INGREDIENTS for 4 servings:
- 1 medium – large head cauliflower
- 1 cup sliced almonds
- 3-4 tbsp extra virgin olive oil
- salt
- freshly ground pepper
METHOD
- Preheat the oven to 180 – 200 °C. Line a baking tray with parchment paper.
- Slice the cauliflower head into 1-2 cm thick steaks, from top to bottom. Place the slices into the prepared baking tray and drizzle them with olive oil, ground pepper and salt.
- Roast for 20-30 minutes until the cauliflower is soft and lightly brown.
- Roasted cauliflower is delicious either served hot or at room temperature.
