Quick tart with Juicy Yellow Peaches and Mint

The key of this easy tart is to use ripe and juicy summer peaches and fresh mint. This cake is delicious on its own but also pairs well with a spoon of vanilla ice cream. Try it and let us know!

INGREDIENTS for 6 servings (or a 20 cm cake) :

1 ready-made puff pastry sheet
2/3 ripe yellow peaches, depending on the size
2 tbsp sugar
mint leaves
1 lemon, juice

Pre-heat the oven at 200ºC.

Peel the peaches and cut them into wedges. Lay the puff pastry into a baking tin. In a glass, mix together 2 tbs of water, lemon juice and chopped mint leaves. Overlap the peaches on the pastry. Then dust them with 2 tbsp of sugar and spread the water- lemon mixture on.

Bake the tart for about 20 minutes at static oven, until the surface is golden.
