This recipe is kindly provided by a very nice and likeable Italian friend as well as a good cook, Antonio Sansonetti!
INGREDIENTS for 4 servings
200 gr green beans
40 gr grated parmesan cheese
250 gr potatoes
3 tbs bread crumbs
In a large saucepan pour cold water, add the potatoes and bring to the boil. Add the salt and cook until the potatoes are soft; turn off the heat. Drain, leave until warm, then peel them and smash.
In another saucepan bring some water to boil, then add salt and green beans, let them cook for a few minutes.
In a bowl mix together the potatoes, parmesan, eggs, salt and fresh ground pepper.
Grease a baking tray with butter (square with 20 cm side), spread the green beans in one layer, then add the potatoes mix. With a fork help the mixture to go between the green beans. Dust with the bread crumbs and put small pieces of butter on the top. Preheat the oven and bake for 20/ 25 minutes at 180°C.
