Frittata is a baked or fried egg dish, it can be served either warm or cold and with a large variety of fillings. If you are still thinking how to get dinner ready, we propose this quick recipe of the asparagus frittata.
INGREDIENTS for 4 servings:
500 gr asparagus tips, finely sliced
50 gr parmesan
200 gr crumb bread – day old bread
Pour some water in a large bowl and soak the bread for approximately 20 min or until totally wet. Then squeeze it to expel the excess liquid. In another bowl mix very well all ingredients and season with salt and pepper.
Pour 2 tbsp extra vergine olive oil in a large frying pan, let it warm and pour the mixture. Put to high heat and let cook for 5 min, until the bottom is golden, then lower the heat and cook for 10 min under a lid. Finally, flip the frittata and let cook on the other side.
