Christmas roll cake

Christmas is approaching and if you’ve already prepared all our previous recipes for your Christmas lunch (or Christmas Eve dinner), you could be tired of cooking.

But I’m sorry to say that  you still have to prepare a Christmas cake. 😉

Given that there is little time left, we suggest you to prepare this Christmas roll. It will take no more than 45 minutes to prepare it, and you’ll end  your Christmas lunch in style.

INGREDIENTS for 6-8 servings:

4 large eggs, room temperature
150 g sugar
150 g all purpose flour
1 ts baking powder
a pinch of salt

For the filling:

210 g powdered sugar
230 g butter, softened
200 g white chocolate, melted
2 ts vanilla extract

Preheat oven to 180 °C.

Grease a sheet pan (22×32 cm) with butter and then cover with baking paper.

In a mixing bowl, beat eggs for 5 minutes until doubled and light in color.

Then add in the sugar, one tablespoon at a time, and beat for another 5 minutes.

In a other bowl, sift together flour, baking powder and a pinch of salt. Then add it in the bowl with eggs and sugar, a tablespoon at a time, mixing gently from the bottom upwards.

Pour the batter into the sheet pan and bake it for 12-15 minutes.

In the meantime sprinkle a tea towel with powdered sugar.

As soon as the cake is ready, invert it onto the towel. Remove the baking paper and roll the cake in the towel. Let it rest until it is cool, around 15-20 minutes.

In the meantime prepare the filling. Put the butter and powdered sugar into a mixing bowl and beat it until very fluffy. Add the melted white chocolate (it should not be hot) and the vanilla extract, and beat it until homogeneous and fluffy.

Tips: If you have no time to prepare the filling, just fill the cake with whipped cream and fresh raspberries.

Then unroll the cake and spread the filling evenly over the top, adding some fresh raspberries.

Roll up the cake  and place it on a platter. Serve it with fresh raspberries on top and dust it with some powdered sugar.

Tips: If you have some leftover frosting, use it to decorate cupcakes. They’ll be just delicious!
